Recipe Preparation
Preparation Steps: Chicken Thighs with Tomato Butter: Place the crisper plate into the COSORI Air Fryer basket. Select the Preheat function, adjust temperature to 220°C, then press Start/Pause. Mix the tomatoes, olive oil, thyme, and ¼ tsp kosher salt together in a medium bowl. Place the tomatoes onto the preheated crisper plate. Select the Roast function, adjust time to 6 minutes, then press Start/Pause. Remove the tomatoes when done and place them into the bowl of a food processor fitted with the blade attachment along with the butter and champagne vinegar. Blend until smooth. Season the chicken thighs with the remaining salt and black pepper.
Jerk Marinated Chicken Drumsticks: Place all of the ingredients except for the chicken into the bowl of a food processor fitted with the blade attachment and blend on high until smooth. Pour the marinade into a resealable plastic bag and add the chicken legs, then seal the bag and refrigerate overnight or for at least 6 hours. Remove the chicken from the refrigerator 30 minutes prior to cooking.
Arrange in Air Fryer: Place the crisper plate into the air fryer basket in Zone1 and Zone 2. Zone 1: Place the Chicken Thighs onto the crisper plate. Zone 2: Place the chicken legs onto the crisper plate.
Cooking Settings: Zone 1: Air Fry at 200℃ for 12 minutes; Zone 2: Roast at 220°C for 12minutes Select Sync and press Start/Pause to finish simultaneously.
Finish & Serve: Zone 1: Remove the chicken when done, then serve topped with the tomato butter. Zone 2: Remove the chicken when done, then serve.
