Whisk together the yeast, honey, and warm water until the yeast is well mixed, then set aside until mixture has a layer of foam on top.
Add the bread flour and kosher salt into the bowl of the stand mixer fitted with the dough hook attachment and mix on low speed for 10 seconds.
Add the yeast mixture and olive oil into the mixer.
Set the speed on medium and mix until a smooth ball has formed. Remove the dough hook and cover the bowl with plastic wrap. Set the dough in a warm place for 1 hour or until it has doubled in size.
Divide the dough in half and roll each piece out to a rectangle with the short end facing you. Fold the top down ⅓ of the way and then fold the bottom over it, like you would fold a letter.
Then, fold the top part down towards the middle and pat the seam down. Rotate downwards to hide the seam.
Roll the baguettes out starting in the middle with open palms, rolling and spreading your hands in the opposite direction simultaneously until you reach your desired length.
Set the baguettes on parchment paper and cover loosely with plastic wrap. Leave the baguettes on the table to proof for another 30 minutes.
Remove the crisper plates and divider from the COSORI Smart Air Fryer.
Pour the hot water directly into the basket, then place the crisper plates back on top.
Place the parchment paper with the baguettes onto the crisper plates.
Select Grandzone, then select the Air Fry function. Adjust time to 18 minutes, then tap Start/Pause.
Flip halfway through cooking and remove the parchment paper.
Remove when done, allow to fully cool, then slice.
