Ginger Carrot Cake
Recipe Ingredients
  • 1 small carrot 120g
  • 1/4 lemon wax-free ・
  • 1 egg 60g
  • cane sugar ・1/4 tsp salt
  • 80ml white sesame oil can
  • be substituted with rice oil or vegetable oil [A] Plain flour 110g
  • [A] 3/4 teaspoon baking powder
  • [A] Cinnamon powder, ginger powder 1/3 teaspoon
  • each ・Walnuts (unsalted), 30g
  • each of dried fruits ・100g
  • cream cheese ・20g granulated sugar
Recipe Preparation
  • Bring cream cheese to room temperature.
  • Crush the walnuts (unsalted) coarsely.
  • Grate the lemon peel and squeeze the juice.
  1. Grate the carrots with the peel and mix with 2 teaspoons of lemon juice.
  2. Crack the eggs into a bowl, add the cane sugar and salt and stir until dissolved. Add white sesame oil and mix thoroughly until it is full.
  3. Add 2 to 1 and mix more.
  4. Sift [A] into 3 and mix quickly with a rubber spatula. Add walnuts (unsalted) and dried fruits and mix further.
  5. Select the preheat function of the COSORI PRO LE 4.7L air fryer, adjust the temperature to 150°C, and press start/pause. Place an oven sheet on a pound mold, pour 4, put it in a basket, adjust the temperature to 150°C, set the time to 40 minutes, and press start/pause.
  6. n a bowl, combine about 2/3 teaspoon of cream cheese, granulated sugar, and lemon juice and mix thoroughly with a whisk. Once the coarse heat of the cake is removed, spread it on top and sprinkle with grated lemon zest.
