2 portobello mushrooms, gills removed and sliced into 6-millimetre-thick strips
2 bell peppers, any color, ribs removed and cut into 6-millimetre-thick slices
½ red onion, thinly sliced
3 garlic cloves, minced
½ jalapeño, seeded and minced
neutral oil 2 tablespoons
2 limes, zested and juiced
dried oregano 2 teaspoons
kosher salt 2 teaspoons
ground coriander 1 teaspoon
paprika 1 teaspoon

Recipe Preparation
Place the crisper plate into the COSORI Air Fryer basket.
Select the Vegetables function, adjust temperature to 200°C, then press Start/Pause to preheat.
Combine the sliced portobellos, bell peppers, onion, garlic, jalapeño, oil, lime zest, lime juice, oregano, salt, coriander, and paprika in a large bowl and mix well.
Place the vegetables onto the preheated crisper plate.
Shake the vegetables halfway through cooking. The Shake Reminder will let you know when.
Remove the vegetables when done, then serve them with the tortillas and lime wedges.
