Dice the bell pepper, eggplant, onion, and tomato into small cubes.
In a bowl, beat the eggs. Add milk, salt, pepper, paprika powder, and grated cheese, and mix well.
Arrange in Air Fryer: Place the crisper plate into the air fryer basket in Zone1 and Zone 2. Zone 1&Zone 2: Place the Mini Frittatas onto the crisper plate.
Cooking Settings: Zone 1: Bake at 180℃ for 15 minutes Select Match and press Start/Pause to finish simultaneously.
Finish & Serve: The frittatas are ready when they are firm, golden, and slightly puffed. Once the cooking process is complete, carefully remove the muffin cups from the air fryer. Let the frittatas cool slightly before removing them from the cups. Garnish with fresh parsley and serve warm or cold, depending on your preference.
